Cauliflower Mashed Potatoes
Grocery List: cauliflower, potatoes, garlic, olive oil, salt, pepper, and rosemary.
- Roast the garlic. 4 cloves in a 350-degree oven for 15 minutes, until they are browned, soft, and smell delicious.
- Boil the potatoes and cauliflower until tender, 15 minutes for the cauliflower and 25 for the potatoes.
- Add the cooked cauliflower to a food processor (or mixer) with the roasted garlic, olive oil, minced rosemary, salt, and pepper, and blend until smooth.
- Mash the potatoes. Fold the cauliflower mixture into the potatoes until everything is combined. You might need to add some of the starchy potato water to make everything less stiff or use some milk.
- Season to taste and enjoy!
